Anti-Inflammatory Granola

I don't mean to brag...but this granola will knock your socks off. Not only is it a low carbohydrate breakfast option, it is also rich in antioxidants and essential vitamins and minerals. It also contains one of my favourite spices- Turmeric. Did you know that the main active constituent in turmeric is actually called curcumin? curcumin is what gives turmeric its potent anti-inflammatory and antioxidant capabilities as well as its vibrant yellow colour that stains everything it touches! 


Now I know what you're thinking, turmeric for breakfast? Just have a little faith and trust me on this one. The turmeric mixed with the cinnamon and a dash of vanilla is a match made in heaven. Top your freshly baked granola with some coconut yoghurt, berries and a dash of coconut milk and you have yourself a wholesome and healthy breakfast. Enjoy!


1 cup raw almonds

1/4 cup chopped macadamias
1/2 cup coconut flakes 
3/4 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup pepita seeds
1/4 cup psyllium husk 
1/2 cup almond meal
1 tbsp turmeric powder
1 tbsp ground cinnamon 
2 tsp vanilla extract
1/4 cup coconut oil
3/4 cup water



Preheat your oven to 150 degrees. Chop up the nuts roughly with a sharp knife then mix all of the ingredients together in a bowl. If you find the mixture is a little dry, add an extra tbsp of coconut oil until all of the mixture is lightly coated in the oil. 

Spread the mixture out on a lined baking tray and roast in the oven for 20 minutes (time can differ depending on the oven so keep an eye on it so it doesn't burn). 

Remove from the oven and stir the mixture. Place back into the oven for another 15 minutes or until golden. 

Congrats! Now you're whole house smells like sunshine.
