Healthy Banana Bread

This healthy banana bread will not only have your taste buds dancing but your house smelling amazing! This recipe was actually created by my sister who was looking for a healthier alternative to your typical sugar, butter and white flour banana bread for her kids to enjoy! I have the bread plain however feel free to put nuts, seeds, dried fruits or chocolate chips into the batter before you bake it to mix things up a bit. Enjoy! Edan x

 

INGREDIENTS

 

1/3 cup melted coconut oil
1/2 cup 100% maple syrup
2 eggs
2 bananas (mashed)
1/4 cup almond milk
1 tsp baking soda
1 tsp vanilla extract
1 cup spelt flour
3/4 cup almond meal

dash of Himalayan salt
dash of cinnamon

 

METHOD


Preheat the oven to 160 degrees celsius and line a bread loaf tin with baking paper. In a bowl, whisk the coconut oil, maple syrup, eggs, milk and bananas until well combined (ensure the coconut oil is not warm otherwise eggs will cook!)

Add the baking soda, vanilla, salt and cinnamon and mix well. Lastly, stir in the spelt flour and almond meal with a wooden spoon until well combined. 

Pour the batter into the lined tin and bake for 50-60 minutes or until a toothpick comes out clean. Let the bread sit for 10 minutes in the tin then transfer to a wire rack to cool.
