These pepita snack bites are incredibly tasty, nutritious and easy to make! They are my version of the Pepita Crunch Snacks you can buy at the supermarket. As much as I love them, my obsession is becoming a little expensive!
My favourite part of this recipe is the pepitas of course. Pepitas are jam packed with valuable nutrients including protein, fibre, healthy fats, phosphorus and iron. They also contain antioxidants including carotenoids and vitamin E. These babies help reduce inflammation and protect your cells against free radical damage.
Did I also mention that they may help improve your sleep? Pepitas contain small amounts of tryptophan, an incredible amino acid that helps create our happy hormone seretonin as well as our sleepy hormone melatonin. Pepitas are also an excellent source of magnesium which has also been associated with better sleep. I could continue to ramble on about pepitas forever but I better share the recipe so you can crack onto making them!
250g pumpkin seeds (pepitas)
2 tbsp hemp seeds
1 tbsp chia seeds
2 tbsp rice malt syrup
Pinch of himalayan salt
Place a pan on medium high heat and toast the pepitas for 3 minutes. Preheat the oven to 175 degrees. Place the pepitas, hemp seeds, chia seeds, rice malt syrup and salt in a bowl and mix together. Place the mixture in a baking tin (I typically use a bread loaf tin) and flatten mixture with a spoon. Bake for 10-15 minutes. Let cool to allow the rice malt syrup to solidify then cut into snack bite sizes!
