Vegan French Toast

INGREDIENTS

 

3 slices of gluten free bread
1/2 banana
1/2 cup coconut milk
dash of cinnamon
1/2 tsp vanilla extract
1 tsp of 100% maple syrup
Fresh berries

 

METHOD


Preheat a pan on medium-high heat. Place the banana, coconut milk, cinnamon, vanilla and maple syrup in a blender and blend until smooth. 

Pour the batter into a separate bowl. Dip the bread pieces into the batter and sear in the pan until golden on each side. 

Top with fresh berries and a touch of honey or maple syrup!
