Apple and Cinnamon Overnight Oats

For the oats
1 cup of organic oats
250mls of almond or coconut milk
1 tbsp of chia seeds
1tbsp of pumpkin seeds
1 tbsp of shredded coconut
handful of chopped walnuts

For the stewed apple
1 apple
½ cup of water
½ tsp of cinnamon

Optional toppings
Greek yoghurt



Mix together all of the oat ingredients and place in a container to soak overnight.

In the morning, chop up the apple into small pieces and place in a small saucepan with the water and cinnamon and simmer on medium heat for 10-15 minutes until tender. Once tender mash them gently with a fork.

Place the overnight oats in a bowl, top with the stewed apples, some coconut yoghurt and a good drizzle of honey, enjoy!
