A blondie, for a blondie!

Everyone loves Brownies, right? How could you not? Sweet, decadent and oh so rich and satisfying. Unfortunately the majority of brownie recipes out there are jam packed with refined sugars, butters, refined flours and a crap load of chocolate, all of which we know are not the best for our bodies. Although the first initial bite is utterly satisfying, the 'side effects' of brownie ingestion typically come in the forms of a sugar dump, bloating and just feeling yuck all round. 
 

Luckily I have come up with the perfect solution for all of your brownie conundrums, a Vegan Blondie that is gluten, dairy and most importantly refined sugar free! 

 

INGREDIENTS

2 cups of almond flour ( I just purchase natural raw almonds and blend them in my nutribullet)
pinch of salt
1/2 tsp baking soda
1/2 tsp baking powder

2 tbsp of nut butter of your choice ( I used almond but you could use any you like!)
2 tbsp of melted coconut oil
2 tbsp of maple syrup
1/4 cup of rapadura sugar or coconut sugar
2 tsp vanilla extract

2 tbsp nut milk
50g Sweet William's dark chocolate bar crushed into small pieces ( you can use any chocolate you like)

METHOD

Preheat your oven to 180 degrees Celsius and line a square baking tin with baking paper. Mix together the almond flour, salt, baking powder and baking soda in a bowl. In a separate bowl combine the melted coconut oil, nut butter, coconut sugar, maple syrup, vanilla and nut milk and mix together well. Add the dry ingredients to the wet ingredients and mix until well combined. The batter should replicate a 'cookie dough'. mix in the crushed chocolate pieces, then press the mixture into the baking tin. Top with some extra chocolate pieces and bake for approximately ten minutes or until golden. Keep in a sealed container.
